Raw Corn and Chicken Salad

Food is a big part of my life - I studied it, I teach it and, of course, I eat it (sometimes way too much of it). So consider this a weekly share of a salad (or soup or ... something healthy) that I'm loving at the moment - plus the book that currently has me hostage.

Raw Corn & Chicken Salad {Eating} and Welcome to Bordertown {Book Incoming}

Consuming: Tasty Raw Corn & Chicken Salad - Leafy green lettuce, shredded carrots, corn kernels (who knew raw corn was sweet), chicken strips (previously grilled), and almond slices (much more was loaded on top before eating). For the salad dressing - there was some homemade stuff in the fridge (the husband does it, not I). Let me tell you - this was beyond delicious!

Raw Corn and Chicken Salad

Reading Incoming Book: Welcome to Bordertown (Borderland #5), Ellen Kushner & Holly Black (Editors). I met the fantastic duo of Holly Black & Ellen Kushner at Book Expo America, and since they had run out of books, they promised to send me one in the mail ... and here it is.

Summary: A shared-universe original anthology series set in an imaginary city in which humans and magical creatures could meet and interact. Bordertown: a city on the border between our human world and the elfin realm. Runaway teens come from both sides of the border to find adventure, to find themselves. Elves play in rock bands and race down the street on spell-powered motorbikes. Human kids recreate themselves in the squats and clubs and artists' studios of Soho.

Thinking: Running 20-30 minutes every day this week has helped me get back into the habit. Over the weekend, I need to tune my bike & get out on the trail a few times a week too.

I don't think I've ever had raw corn. But I love how you used it in the salad.
Bordertown sounds good. I'll keep an eye out for it.

The salad looks lovely. I *have* eaten raw corn and when it's fresh from the garden, it's definitely yummy.

That salad looks good! Yes, corn is SWEET. And that's how they can use corn syrup as a sweetener and substitute for sugar. *grin*

Glad to read that you are getting back into the running habit. I am enjoying it so much. This morning I felt sore and sluggish but I went out and did my run and I just felt great afterwards. Still do. Very energized. And given the hot weather we've been having I cherish those few moments at dawn when I can run in reasonable climes.
