This summer for us means grilling and chilling … well – truth be told – that’s every summer for us! The recipes on the menu are usually quick and easy, but colorful and flavorful. Here’s 10 of our favorites that we’ve already cooked a bazillion times.
ONE+ Grilled Chicken Skewers
Marinated chicken breast and any hardy vegetable you choose. Bell peppers are a must – you can’t beat the roasted sweet flavor … but I don’t like zucchini (anyone else?) – so I substitute onions … which I also don’t like EXCEPT in this case! I swear to all the onion haters out there that when you grill it – ooh the deliciousness!
TWO+ Blue Cheese Burgers
If you’ve been using plain ground beef for your burgers – you’re missing out! Mix in blue cheese, dijon mustard and garlic powder … and diced onions You will thank me. This year, my husband bought a little gadget that you can use to make perfectly round burger patties. I say – it’s easy enough to shape them by hand, but I’ll not deny a man his tools. So, we’ve been having these amazing burgers throughout the summer – and they’ve been perfectly round. It’s the little things.
THREE+ Grilled Corn on the Cob
There really is no recipe for this – put the whole corn on grill. Rotate every few minutes. Take it off, remove the husk and enjoy. Some say to soak the husk before-hand and you’ll get more tender corn. If I have the time, and remember – then I do it. If not – I don’t – and it’s still pretty darn good to me.
FOUR+ Paprika Salmon and Green Beans
I know it may seem like we spend all our time grilling outside but it’s not! While the Lemon Pepper Salmon mentioned in April’s Meal Plan is my go-to recipe … this one that calls for smoked paprika is also at the top of my list. I’ve only recently started using smoked paprika as a spice and I love it on just about everything!
FIVE+ Spicy Sriracha Shrimp
Shrimp is so easy to cook and with this recipe, you control the spice factor with the amount of Sriracha you add.
SIX+ Southwestern Chicken Salad
This is so easy to prepare with the extras from other recipes. The corn from grilling the corn … chicken from the kebabs. And with veggies from your garden – like tomatoes and lettuce … not that I have a veggie garden – but if I did … I would totally grow those things, and then use it in this recipe.
SEVEN+ Beef Tacos
What do you add to your tacos? My husband and sons like sour cream, lettuce, tomatoes and cheese. I don’t like sour cream, so I add Taco sauce instead.
EIGHT+ Home-made pizza using Trader Joes Pizza Dough
What are your favorite pizza toppings? My family things I’m crazy but I love Hawaiian style with ham, pineapple and bell peppers.
NINE+ Crispy Chicken, Ham, and Swiss Roll-Ups
I love this combination so much! The only thing I do differently is cut the cutlets in half to make them less thick. Also, season the meat of course.
TEN+ Lemonade
Do we really need a recipe for lemonade?!
